MEXICAN CUISINE (6 week session)
The Good Food Factory is excited to offer an all-time favorite…Mexican Cuisine! Mexican Cuisine is a delicious blend of European and Spanish influences, that artfully combines corn, beans, tomatoes, avocados, peppers and rice into every day awesomeness. We’ll celebrate recipes from various regions in Mexico, from Oaxaca to the Yucatan! Each week, we’ll cook a different recipe and explore breakfast, lunch, snack, dinner and party foods from regions throughout Mexico.
Each class and recipe will explore traditional cooking methods, while also introducing your young chef to new cultures and flavors. Chefs will learn knife skills, measuring, pouring, cooking terminology as well as cooking theory and safety. Classes are just as fun as they are delicious!
Please be sure to note that we have moved to a NEW location in downtown Carlsbad!
All classes will be held in the Carlsbad location, named “The HUB.” This new location is more modern, with a gorgeous cooktop, stove and an amazing facility and community! Plus, it also has a beautiful courtyard to eat and relax! We look forward to creating happy memories in our new kitchen! Come join us!
Classes will begin the week of March 1st and go through the week of April 7th
How Classes Work:
- Classes are 1.5 hours
- Classes are appropriate for chefs ages 5-14
- We cook with real chefs’ knives, real pots, real pans, tools and using real cooking methods in a REAL working kitchen!
- Chefs make decent-sized tasting portions, and there is usually enough for parents to try a bit, too!

About Our Classes:
With a skills-based and hands-on approach to learning, young chefs will learn traditional cooking techniques, theories, history and practice, in a working kitchen, with a chef teacher, Amanda. Our classes have a strong emphasis of “garden to table” and incorporate fresh, local and seasonal produce whenever possible. Chef students will walk away from our classes with a working knowledge of culinary techniques and a foundation for being chefs their entire lives.
Teacher & Curriculum
Chef Amanda has been teaching children how to cook for over 8 years with after school classes, field trips, assemblies, birthday parties, cooking camps, and through her Emmy Award winning television show, The Good Food Factory. Her food philosophy focuses on “good food, from scratch!” and her classes have been described in the 2012 issue Best of San Diego Magazine as “the best way to get your kids to eat their veggies.” Amanda has always taught ‘real’ cooking to children: wholesome meals that involve a lot of chopping, grating and peeling, as well as fresh herbs, fruit and vegetables. Her students return time and time again to take more classes and it was through their dedication to learning and their hunger for advanced skills that she realized they were ready for more. “These kids could go to culinary school!” Amanda thought… and the idea for a cooking school for kids was born. A program where youth have the opportunity to learn step by step methods for being a master chef. However, there is only one rule: “The FOOD is the only thing we take seriously.” Cooking curriculum and programs offered by the The Good Food Factory are created and hosted by Amanda, and she promises that her classes are just as fun as they are delicious and educational.
