Ep 1 Breakfast: Amanda cooks up delicious breakfasts with Jason, Alyssa & Brandon!

Recipes: Apple Pie Oatmeal / Cowboy Pancakes  / Yummy Yogurt Parfait

Apple Pie Oatmeal

Ingredients:

2 cups milk
1 cup old fashioned rolled oats
1/4 cup maple syrup (real maple syrup!)
1 large apple
1 Tbsp Chia seeds
pinch salt
1 tsp cinnamon
(chopped almonds to top)

Directions
Add milk, oats, syrup, chia seeds, salt & cinnamon to large bowl. Mix and let sit until chia seeds become plump! Core & Dice apple, add to bowl.  Pour into skillet and place on stove on medium heat, for about 8 minutes. Stir occasionally, until gooey.
Remove from heat, let cool a bit, enjoy!

Cowboy Pancakes

Ingredients:

WET
2 eggs, lightly beaten
2 Cups milk
1 tbsp butter (melted)
1 1/2 tsp vanilla extract

DRY
1 Cup whole wheat flour
1 Tbsp Turbinado Sugar
1 1/2 cups old fashioned rolled oats, added to a blender (to make oat flour)
1/2 cup dried fruit
1/4 almonds
1 Tbsp baking powder
1/2 tsp cinnamon
1 tsp salt

Directions:
Blend oats, fruit & almonds in blender. MIX in separate bowls (dry with dry, wet with wet). Then, mix together, by pouring wet into dry. Heat skillet over medium heat, with 1/4 cup measure pour in batter in skillet. Wait until bubbles begin to form, then flip! Cook until bottom is golden brown.

Enjoy with fresh fruit & yogurt.

Yummy Yogurt Parfait

Ingredients:

Greek Yogurt – Plain
Strawberries
Blueberries
Fresh lemon
Honey
Organic Granola (any flavor, we used cherry/vanilla)

Directions:

Wash, hull and chop strawberries. Place in bowl with washed blueberries. Squeeze fresh lemon over top, add squeeze of honey. Layer ingredients in bowl or cup: yogurt, fruit mix, granola. Enjoy!
