Ep 13 Surf Snacks: Nothing makes Amanda, Dagan and Curran happier or hungrier than SURFING! 

Recipes: Dawn Patrol Muffins, Trestles Trail Mix and Sunset Session Pops

Dawn Patrol Muffins

Ingredients:

Wet:
1 Tbsp cider vinegar + 1 cup milk = Sour Milk
1/2 cup applesauce
1/4 cup melted butter
1 tsp vanilla
1 egg
1/3 cup turbinado sugar

Dry:
1/2 cup oat flour (blended instant oats)
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
1/2 cup dried fruit (1/4 cup dried coconut, 1/4 cup dried banana)
1/4 cup dried, roasted almonds
1 cup instant oats

Directions:
Place 1 Tbsp cider vinegar into 1 cup milk and let sit for 5 minutes = sour milk. Place all other wet ingredients in large bowl and mix together. Mix in sour milk when ready. Place all dry ingredients (except for 1 cup instant oats) in blender, blend well. Mix dry ingredients into wet ingredients. Grease muffin pan with coconut oil (or sunflower oil). Pour in batter by the spoonful. Bake at 350 degrees for 20 minutes (if using mini-muffin tin), longer if using regular sized muffins (25-30 minutes). Remove when can pull out clean toothpick, eat and enjoy!

 

Trestles Trail Mix

Ingredients:

Organic Granola
Dried Coconut
Cranberries
Dark chocolate chips
Banana Chips (unsweetened)
Raw almonds

Directions: Mix desired amount of each, enjoy!

Sunset Session Pops 

Ingredients: 

Strawberries
Mango
Banana
Turbinado sugar (1 tsp)
Dried Coconut
Vanilla, creamy yogurt.

Directions: Chop strawberries, mangos and banana into small pieces, keep in separate bowls. Mix in 1 tsp of sugar over strawberries, let sit 5 minutes. Layer as follows into freezable popsicle containers: strawberry, yogurt, mango, yogurt, banana, yogurt, dried coconut on top. Cover and freeze! Enjoy!
