Ep 14 Loco Por Tacos: Amanda and friends are cooking up a Mexican feast! 

Recipes: Grilled Chicken, Tacos, Agua Fresca

Grilled Chicken 


Chicken Breast, cut into 1″ strips

1/4 cup apple cider vinegar
1/4 cup olive oil
dash salt
dash pepper
1/4 cup cilantro
1 fresh lime
1 clove garlic


Make marinade and place in deep dish or bowl, place in chicken  and let sit for 4-6 hours. Heat up grill and cook chicken until grill marks appear and chicken can be torn easily with a fork (about 5 minutes on each side).

Cheddar Cheese
1 fresh lime


Prepare all ingredients by chopping lettuce into strips, tomatoes into small chunks, cilantro into bits and by grating the cheese. Layer grilled chicken into warmed tortillas, then place on the taco toppings of your choice!

Agua Fresca


2 large cucumbers
6 limes
1 large bunch of fresh mint
turbinado sugar (to taste)


Juice limes into big bowl. Chunk cucumber and place into food processor. Pull leaves off of mint, add to food processor with turbinado sugar (about 1/4 cup) and add in lime juice. Blend well. Run through a sieve. Pour juice over 4 cups of ice in a pitcher. Let sit until a bit watery (can also add a bit more water). Enjoy!
