Ep 2 Lunch: Black Bean Quesadillas with Mango Salsa!Starring: Mackenzie, Kelsey & Crosby!

Recipes: Baked Quesadillas with Black Beans and Mango Salsa!


Cuban Black Beans (spreadable)


1 medium white onion, chopped

1 can black beans, rinsed and drained.

Splash olive oil.

Sploosh of cider vinegar.

Dash of salt.

Pinch oregano.

Water (enough to cover beans).


Chop onion and place in small pot. Rinse black beans until water runs clear, place in pot.  Place all other ingredients into pot. Pour cold water over until covered. Place pot on high heat, covered, until it boils. Uncover and then let simmer until almost all of the liquid is gone (about 5-10 minutes).  Place in food processor and blend until creamy.  Set aside for quesadillas.

Baked Quesadillas


Cheddar Cheese
Olive oil
Spreadable black beans from recipe above!

Grate cheddar cheese. Brush ONE side of each tortilla with olive oil (just a little). Place olive oil side down. Spread black beans over one half of the un-oiled side. Cover beans with grated cheddar cheese. Fold over. Place on baking sheet. Bake at 400 degrees until golden brown (about 10 minutes).


Mango Salsa


1 ripe mango
1 tomato
1/4 cup cilantro
1 cucumber
1/2 white onion
1 lemon, freshly squeezed
dash salt
splash olive oil


Chop mango, tomato, cucumber, cilantro and onion.  Cover with salt, olive oil & lemon. Place in food processor and pulse until lightly chunky. Enjoy!
