Ep 3 Skater Snacks: Skating with the Vrklan’s would make anyone hungry!

Recipes: Oatmeal Nuggets, Fizzy Drink, Skater Pops

Oatmeal Nuggets

Ingredients:

Wet:
1/2 cup olive oil
1 egg
1 Tbsp molasses
1/2 cup honey

Dry:
1 cup Whole Wheat Flour
1 1/2 cup instant oats
1 Tbsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
baking soda

Directions:
Preheat oven to 335 degrees. In medium bowl, crack & lightly beat egg, add in all other wet ingredients and mix well. In another medium bowl, add all dry ingredients and mix well.  Make a well in dry ingredients and pour in wet. Mix well. Dough should be lumpy & sticky. Set in refrigerator to chill for 20 minutes.  With your fingers, make into “bouncy ball” sizes and place on baking sheet.  Bake at 335 degrees for 15 minutes. Nuggets should be golden and puffy. Let cool and enjoy!

 

Fizzy Drink

Ingredients:

1 large bottle sparkling mineral water
3 large oranges
1 large lemon
2 limes
Ice
Agave syrup

Directions:

Fill pitcher 1/2 way with ice, squeeze fresh fruit juice over ice. Add in squeeze of agave. Fill rest with sparkling water. Mix. Serve! Garnish cups with slices of fresh fruit.

 

Skater Pops

Ingredients:

Roasted unsalted almonds (you choose amount)
1 large vanilla yogurt
2 bananas
blackberries (you choose amount)
dried coconut

Directions:

Place everything in blender (except for coconut). Pour into freezable cups. Top with dried coconut and place in a surprise blackberry. Place in popsicle stick, cover and freeze. Remove from freezer, and twist out of container. Enjoy!
