Ep 4 Dinner: Veggie Stir Fry with the Vrklan Family!

Recipes: Brown Rice, Homemade Teriyaki Sauce & Stir Fried Veggies

Baked Brown Rice (from Cook’s Illustrated)

Ingredients:

2 1/3 cups water
2 tsp unsalted butter
1 1/2 cups organic brown rice
Directions:
Preheat oven to 375 degrees. Place water, butter & salt in pot, cover and bring to boil. Place rice in large baking dish. Cover with the boiling water. Shimmy to spread everything evenly. Cover tightly with tin foil. Bake for 1 hour at 375 degrees. Fluff with fork and enjoy!

Homemade Teriyaki Sauce

Ingredients:

1/3 cup Honey
1/3 cup Soy Sauce
3 cloves garlic
1 cup Water

Directions:

Peel, mince garlic, add to skillet.  Pour soy sauce, honey and water into skillet. Let simmer, 5 minutes.

 

Stir Fried Veggies

Ingredients:

1 large white onion
6 bell peppers (all colors: red, green & yellow)
3 cloves garlic

Sunflower oil.

Directions:

Chop onion, and julienne peppers. Coat a wok with sunflower oil. Place over medium high heat and add in veggies. Cook for about 10 minutes, until onions and peppers become seared on edges. Add in teriyaki sauce. Remove from heat, serve over rice!
