Ep 5 Dinner: It’s a party with cousins Abigail & Julian!


Midnight Brownies

Ingredients:

1 can black beans, rinsed & drained
3 large eggs
3 Tbsp Olive oil.
1/2 cup agave nectar
1/2 cup unsweetened cocoa powder
1 tsp vanilla extract
1/2 tsp baking powder
pinch of salt
1/4 cup chocolate chips

Directions:
Preheat oven to 350 degrees. Open, rinse black beans and place in food processor. Crack eggs and place in food processor. Place all other ingredients to food processor and blend well.  Lightly oil a baking 9×9 baking dish with olive oil. Pour in batter. Sprinkle chocolate chips over top. Bake for 30-35 minutes. Remove from oven, let cool slightly and enjoy!

 

Swamp Thing Smoothies

Ingredients:

1 cup almond milk (vanilla or regular)
1 large handful of spinach leaves
1/4 cup vanilla soy powder
1/4 tsp peppermint extract
1 banana
1 cup of ice

Directions:

Place all ingredients in blender, blend until smooth. Add more ice or milk as needed. Enjoy!

 

Fruit Kabobs

Ingredients:

Grapes
Clementines
Apple
Pineapple
Mango

Directions:

Wash, peel and chop (if needed) all fruit. Place on BBQ skewers. Eat!
