Ep 9 Dinner at the Diner: We cook up our favorite diner treats, the healthy, fun, silly way!
Recipes: Veggie Burgers, Baked Fries, Vanilla Shake
4 large stalks celery
1 large red pepper
1/2 red onion
1 piece whole grain bread
1 can garbanzo beans
2 eggs, cracked and lightly beaten.
1/2 cup finely ground, roasted almonds
1/4 cup cooked red lentils
1/4 cup cooked quinoa
pinch of salt (1 tsp)
Chop celery, pepper, onion into large chunks. Break bread into chunks by hand. Rinse and drain garbanzo beans. Place celery, pepper, onion, bread into food processor and pulse until chunky. Add in all other ingredients, except for eggs and again, gently pulse until it forms a coarse meal. Then pour into large bowl and mix in lightly beaten eggs. Preheat oven to 400 degrees. Grease a baking sheet with sunflower oil. Using a 1/4 cup, measure out patties onto tray, leaving some space in between. Cook for 30 minutes, until golden on top and can be lifted off of sheet easily. This recipe yields around 12 veggie burgers and they can be frozen, once cooked and then easily re-heated in a toaster oven! Best eaten on bread, topped with cheese!
Large Russet Potato (1 per person)
2 Tbsp coconut oil
dried onion powder
Wash and peel potatoes (about one per person), slice potato into french fry shaped slices! Preheat oven to 425 degrees with a cast iron skillet inside, or baking sheet (to also preheat the sheet/skillet). Place potato into large bowl, add in dash of salt, onion powder, paprika and the coconut oil. Mix well so potatoes are evenly coated. Spread onto skillet or baking sheet. Cook at 425 degrees for about 1/2 hour, until golden brown. Flip, halfway through.
1 large container greek yogurt
1 Tbsp vanilla extract
Squeeze of honey (2 Tbsp)
2 cups milk
2 cups ice
Add everything to blender and blend! Pour and enjoy!
